Dessert Shops Add Cranberry Magic to Their Christmas & New Year Specials

New Delhi [India], December 23: This Christmas and holiday season, dessert shops are giving their menus a festive makeover by adding cranberries to their most-loved treats. The bright red berry delivers the perfect balance of tang, sweetness, and colour, making it a standout ingredient for December and New Year celebrations. Chefs across the country are embracing the trend with creative cranberry-forward bakes that feel warm, indulgent, and holiday-ready. Here, Chefs Kamaldeep, Teja, and Simrun share three festive recipes to try at home.

Festive Cranberry Bake – Recipe by Chef Kamaldeep

Ingredients:

  • Flour
  • Sugar
  • Butter
  • Curd
  • US Cranberries
  • A little flour for dusting the berries

Method:

  1. Mix flour, sugar, butter, and curd to create a smooth batter.
  2. Add US Cranberries for a bright, tangy Christmas flavour.
  3. Toss the cranberries in a little flour to keep them evenly spread.
  4. Fold them gently into the batter.
  5. Bake until golden and fluffy. Slice, serve, and enjoy the antioxidant-rich goodness, perfect for the holiday season

Orange Cranberry Cookies – By Chef Teja

Ingredients:

  • 250 g Maida
  • 1/2 cup Chopped US Cranberries
  • 225 g Unsalted Butter
  • 1 tsp Vanilla Extract
  • 1 tbsp Orange Juice
  • 1/2 cup Sugar Powder (100 g)
  • 1 pinch Salt

Method:

  1. Cream together unsalted butter and sugar powder.
  2. Add vanilla extract, orange juice and salt.
  3. Fold in maida to form a soft dough.
  4. Mix in chopped cranberries.
  5. Shape the dough into cookies and place on a baking tray.
  6. Bake at 175°C for 12–15 minutes or until edges turn golden. 
  7. Cool on a wire rack and store in an airtight jar, a festive cookie perfect for Christmas gifting or New Year snacking.

Chickpea Cranberry Chocolate Brownies – By Chef Simrun

Ingredients:

  • 1.5 cups Chickpeas (white chole), boiled & drained
  • 3 large eggs (replacement in notes) 
  • 1/4 cup Dates jaggery, crumbled
  • 1/4 cup Honey
  • 1/3 cup Unsweetened cocoa powder
  • 1 tsp Baking soda
  • 3 tbsp Melted coconut oil
  • 1 tsp Vanilla extract
  • 1/3 cup Chopped walnuts
  • 1/4 cup Dried US cranberries
  • 1/2 cup Dark chocolate chunks

Method:

  1. Preheat oven to 180°C.
  2. Grease a baking tray or dish with oil and dust with flour.
  3. Add chickpeas, eggs, dates/jaggery, honey, cocoa powder, baking soda, melted coconut oil and vanilla extract to a blender. Blend until smooth.
  4. Stir in chopped walnuts, dried cranberries and half the chocolate chunks.
  5. Pour the batter into the prepared dish.
  6. Top with remaining chocolate chunks and gently press them into the batter.
  7. Bake on the lower rack for 10–12 minutes, or until a toothpick inserted comes out clean.
  8. Cool completely before slicing, a wholesome, rich brownie perfect for festive gatherings through Christmas and New Year.
